In the workshop, we will look at a couple of dishes as they may have been prepared during the Viking Age. Though most of the utensils are modern, you will have the chance to test traditional sausage making using cowshorns, and learn how a porridge was made in 1000 AD.
For the vegetarian option, you will have the chance to make fresh cheese, a pottage of herbs and the cheese you just made, and finally, bread based on archaelogical finds from Birka, Sweden.
About Daniel:
I am a Swedish archaeologist who has been working with ancient food both in theory and practice. Besides working on a Ph.D on the Viking cuisine I often work with museums and historical events. I aim to look into cooking techniques, culinary practices and tastes from the Viking age to the Renaissance.
